Sumatra
Earthy, herbal and heavy-bodied. Cooler water and a coarser grind than anything else here.

- How to drink it
- Either
Earthy and herbal with a heavy body and very low acidity. The classic Sumatra profile, pushed further by a dark roast. Either your thing or not; there is not much middle ground.
Dark and very soluble, so it tastes ashy on the Dogspeed settings. Back the water off, shorten the contact, go coarser and use less coffee. Excellent in immersion, where the body is the point.

- Water temperature
- 195-200F.
- Time
- Shorter contact.
- Grind
- One step coarser than the Dogspeed numbers.
- Dose and ratio
- 1:17 to 1:18.
How to drink it. Black if you like the earthiness, with milk if you do not. The body carries milk easily and the herbal edge softens. Sugar helps if the finish reads bitter, though that usually means the water was too hot.
