Dark chocolate, blackberry and lime up front, with hibiscus, tamarind and bergamot underneath. Lush and creamy in the mouth, and it keeps moving as you drink it — more like a complex wine than a straightforward cup.

Praxis rebuild this seasonally rather than locking a recipe, so the farms change while the profile holds. The washed component supplies the clarity and the citrus structure; the natural component supplies the jam and the body. That combination is why it reads as layered rather than simply dark, and why it survives milk without going flat.

What to do with it

Water temperature
As filter, 198-203F.
Time
As espresso, 25-30 s; if the citrus turns sharp, pull a little longer rather than grinding finer. As filter, as written.
Grind
As written.
Dose and ratio
As espresso, 18 g in and 36 g out. As filter, 1:16 to 1:17.

How to drink it. Espresso first, black or in milk. Black is where the hibiscus and bergamot show up; in milk the chocolate and blackberry take over. Good as filter too, where the acidity has more room. No sugar.
