Jalapeno-Pickle Fried Chicken Bites with Soy Garlic Honey Sauce

A potato starch and rice flour blend gives a very crisp, glassy crust, and the chicken gets a short brine in pickle and jalapeno juice on the way.

Method

  1. Marinate 30-35 min · brined

    Whisk the pickle juice, jalapeno juice and egg together, add the chicken and the jalapeno slices, and leave it 30-35 minutes.

  2. Prep dust and dredge ready

    Whisk the seasoning dust ingredients together. Combine the flour, potato starch, rice flour, baking powder and baking soda, and stir 2 tbsp of the dust into it. Keep the rest of the dust for after frying.

  3. Simmer 4 min · thick and glossy

    Simmer the soy sauce, honey, water, sherry or mirin, garlic and rice vinegar for 3 minutes. Re-stir the cornstarch slurry, add it and whisk 1 minute. Off the heat, stir in the sesame oil and pour it into a serving bowl.

  4. Prep 5-10 min · coating looks slightly damp

    Working in batches, lift the chicken out of the brine and let the excess drip off. Press the dredge firmly into every crease to build a heavy coat, then rest the pieces on a rack until the flour looks damp. That is what keeps the crust on in the oil.

  5. Fry 10-12 min · deep coppery brown, 175-181F

    Heat 2 inches of oil to 350F in a deep skillet or heavy pot. Fry in batches without crowding, flipping halfway. They are done when the colour is deep, the bubbling has slowed and the inside reads 175-181F, which is what keeps thighs juicy.

  6. Serve dusted while hot

    Move them to a clean wire rack and sprinkle the remaining seasoning dust over them straight away. Serve with the warm sauce on the side for dipping - sauced, the crust is gone in minutes - and something green.
