Soy Garlic Honey Sauce

Simmered, thickened just enough to coat, and served alongside rather than tossed through. Sauced, a fried crust is gone in minutes.

Lifted out of the jalapeno-pickle fried chicken bites, where it was one step among six, because the Korean fried chicken calls for it too and was naming it in an ingredient line rather than linking to it.

Method

  1. Simmer 3 min · just short of syrupy

    Simmer the soy sauce, honey, water, sherry or mirin, garlic and rice vinegar for 3 minutes.

  2. Finish 1 min · coats a spoon

    Re-stir the cornstarch slurry -- it settles in the time it takes to do anything else -- add it, and whisk 1 minute.

  3. Finish off the heat

    Off the heat, stir in the sesame oil and pour it into a serving bowl. Sesame oil goes in off the heat or it turns bitter.
