The Seasoning Dust
Two tablespoons go into the dredge and the rest goes over the chicken the second it comes out of the oil. Kept deliberately low on salt, because whatever it lands on has been in brine.

Whisk everything together.

Stir 2 tbsp into the dredge. Keep the rest for after frying.

Sprinkle the reserved dust over the pieces the moment they come out of the oil, on a clean rack. Hot and slightly greasy is the only state a dry seasoning will stick to.
