RYZE, in a Yeti
Instant mushroom coffee, made properly, hot or over ice. Some mornings you want coffee, not a procedure.
- Total
- about a minute
- Dose
- 3 g
- Water
- 440 g
- Water temp
- 165°F / 73.9°C
- Ratio
- 1:146.7
The ice dilutes as it melts, which is why the cold water is 300 g rather than 400. If you like it stronger, use less cold water and more ice.
165°F, not boiling. The single thing that makes instant taste better. A kettle with temperature control, or boiled water left to sit five minutes.
3 g, not 6. A full scoop goes muddy and earthy and fights the creamer. Half that, plus cinnamon, lands where you actually want it.
3 g is half a scoop, roughly. Powders settle, so the scoop drifts and the gram figure does not. Use the scale at home and the scoop when you are travelling.
Cinnamon goes on last, over the creamer. Stirred in early it sinks and does nothing.
Three grams looks like nothing next to a 55 g Chemex dose, but instant is already-extracted coffee. A pour-over gives up only about a fifth of its grounds to the cup, so 55 g of beans is roughly 11 g of coffee in the mug. It is still a lighter cup, at around half the caffeine of regular coffee, which on some mornings is the point.
It mixes cold too, if you would rather have it over ice. Same paste first, then cold water.
This is not a Chemex morning, and that is fine. It is the cup for the days when there is no time for a project, and it travels.
Ingredients
Brew process
-
Dose
3 g into the tumbler with 40 g of hot water. Stir to a smooth paste. Do this with hot water even for the iced version: cold water will not dissolve it cleanly and you will be drinking grit.
-
Pour
Add 300 g of cold water and stir.
-
Serve
Fill with ice, then creamer to taste and cinnamon over the top.
If it's not right
| What you see | Why | What to do |
|---|---|---|
| Bitter or burnt | The water was too hot. | 165, not boiling. |
| Clumpy | It went into a full cup instead of being slurried with a splash first. | Paste it with a splash of hot water, then fill. |
| Muddy and earthy | Too much powder. | Back to 3 g. |
| Weak | Not enough powder. | More powder, not more heat. |
