How it tastes
Blueberry and blackberry, black pepper, dark chocolate and a little violet.
Full-bodied and dry, with big drying tannin and a long finish.
How to serve it
Inky and hugely tannic. Ninety minutes, and it would take more.
Inky and hugely tannic. Three years minimum, and it wants more.
Pour it with
- Texas Brisket The only wine here that can out-muscle the bark
- St. Louis Ribs (About 3 Hours) Pepper against glaze
- Pork Belly Burnt Ends (Jalapeno Jelly & Miso) Tannin against fat
