Caymus Vineyards, Cabernet Sauvignon
Rich and sweet-edged, which is exactly why it works with barbecue. The least subtle Cabernet here, on purpose.

Rich and sweet-edged, which is exactly why it works against bark and smoke.
How it tastes
Ripe blackberry and cassis, vanilla, mocha and a sweet toasted-oak finish.
Full-bodied and plush, with soft round tannin. Reads almost sweet though it's dry.
How to serve it
Plush enough to drink straight away; half an hour rounds the oak.
A 2022 made to drink on release, and it does.
Pour it with
- Texas Brisket Sweet fruit against smoke and salt
- Pork Belly Burnt Ends (Jalapeno Jelly & Miso) Matches the glaze head-on
- Sous Vide Prime Chuck Burger Plush wine, fatty beef
