How it tastes
Blackcurrant and dark cherry, cedar, and a dusty mineral note — the pencil-shavings smell people call graphite.
Full-bodied and dry, with firm tannin that grips a little. Better with food than on its own.
How to serve it
Single-vineyard and firm. An hour softens the grip without losing the fruit.
Single-vineyard and still tight. Another two or three years.
Pour it with
- Sous Vide Prime Chuck Burger Tannin against a fatty burger
- Tri-Tip Smoked Like a Brisket Cedar and smoke
- Texas Brisket Structure for the bark
