The everyday coffee. Crisp, balanced, chocolate underneath and some florality on top, and nothing about it that needs managing. Close in spirit to Dogspeed, which is the other bag I keep around for the same reason.
That's a real category and it doesn't get enough credit. Most coffee writing is about the interesting bag, the single origin that tastes of blueberry for three weeks and then is gone. The everyday bag is the one you actually drink, and it has to be good on a Tuesday when you are not paying attention.
Sparrows built it for West Michigan weather, which apparently means all four seasons in one day. The result is a coffee that works hot in January and iced in July, and that flexibility is the point.
How I brew it
Anything. That's the appeal. Chemex, V60, Moccamaster, AeroPress, all fine.
If the house default is a single bag, this is a reasonable one.
Roaster's notes
Crisp, apple, floral. Chocolate underneath.
What I taste
Balanced and easy. Nothing sticks out, and I mean that as a compliment.

Every day. The bag that's open when there isn't a reason to open a different one.
