A biscuit dough rather than a bread dough. It does not have the pull of a yeasted roll, and it does not ask for the two hours either.

Method

  1. Prep oven hot, pan buttered

    Heat the oven to 400F and butter the pan.

  2. Prep coarse crumbs with pea-sized bits

    Whisk the flour, sugar, baking powder and salt. Rub in the cold butter until it looks like coarse crumbs with some pea-sized pieces.

  3. Prep soft and slightly sticky

    Beat the egg into the milk, pour it over the flour and stir by hand just until it comes together. Add a splash more milk if it is dry.

  4. Assemble 10x12 inches

    Roll the dough between two sheets of parchment to a 10x12-inch rectangle and peel off the top sheet.

  5. Assemble rolled into a log

    Spread the softened butter over the dough, sprinkle with brown sugar and cinnamon, leaving a ½-inch border on one long edge. Use the parchment to lift and roll it into a log, starting from the filled edge.

  6. Assemble 8 rolls, cut side up

    Slice into 8 with a serrated knife or dental floss and nestle them in the pan.

  7. Bake 20-24 min · golden, centres set

    Bake 20-24 minutes.

  8. Finish glazed

    Cool a few minutes. Whisk the glaze and drizzle it over while they are still warm.
