Overnight Oxtail & Beef Shank Stock
Oxtail and shank roasted dark, then left overnight. The jus the Italian beef is built on.

Oxtail for body and shank for flavour, roasted hard first. It goes in before bed and is strained before work.

Roast
Heat the oven to 450F. Rub the bones lightly with tomato paste and roast them with the onions, carrots, celery and garlic.

Move it all into a slow cooker or a heavy Dutch oven.

Pour 2 cups of boiling water into the hot roasting pan, scrape up the browned bits and pour that over the meat.

Simmer
Add the bay, peppercorns, Italian seasoning and vinegar, and enough water or broth to cover. Slow cooker on Low for 8-10 hours, or covered in the oven at 225-250F.

Finish
In the morning, lift out the bones and meat and strain the stock through a fine-mesh strainer.

Chill
Refrigerate until the fat hardens, then lift it off. Reheat and use as the Italian beef jus.
