Grinders: why burrs, why espresso is different, and how to use my numbers on your grinder
Every brew recipe on this site lists a number from my Fellow Ode 2. This is how to turn that number into a setting on whatever you own.
Why a burr grinder, not a blade
A blade grinder is a propeller in a cup. It smashes beans into whatever sizes happen to result: a few boulders, a lot of medium, and a cloud of dust. Every one of those extracts at a different rate. The dust gives up everything it has in seconds and goes bitter; the boulders never give up anything and taste sour and thin. You get both in the same cup, and no amount of adjusting the brew fixes it, because the problem is in the grounds.
Burrs work differently. Two surfaces at a fixed distance, and the coffee passes between them until it is small enough to fall through. The distance is the setting. Everything comes out close to the same size, which means everything extracts at roughly the same rate, which means the cup tastes like one thing instead of three.
That is the whole argument. It is not about the machine feeling nice. It is that a blade grinder makes a cup you cannot dial in, because there is nothing to dial.
Conical or flat
Both are burrs, and both are fine. The difference is smaller than the internet suggests.
Conical burrs are a cone inside a ring. They tend to produce a slightly wider spread of particle sizes, which reads in the cup as more body and a rounder, sweeter shot. Most hand grinders are conical, and most espresso grinders under a few hundred dollars are too.
Flat burrs are two rings facing each other. They produce a narrower spread, which reads as more clarity and separation: you taste the individual notes more distinctly. My Ode 2 is flat, which is part of why the pour-overs on this site taste the way they do.
If you are choosing, choose on build quality, adjustment precision and retention. Burr shape is the last thing that matters, not the first.
Why espresso needs a different grinder
This is the part that costs people money.
Espresso lives in a very small range. The difference between a shot that runs in 25 seconds and one that chokes the machine is a few tens of microns. A grinder built for filter coffee often cannot even reach espresso fineness, and if it can, its adjustment steps are too coarse to land inside that window: one click takes you from gushing to choking with nothing in between.
Filter coffee is forgiving by comparison. The useful range is wide, and a step that moves the grind noticeably is still a step you can work with.
So:
- Filter-only grinders (my Ode 2 included) are excellent at what they do and cannot do espresso. That is a design decision, not a fault.
- Espresso grinders are stepless or very finely stepped, so you can make tiny adjustments.
- Do-everything grinders exist and are a compromise: good enough at espresso to learn on, good enough at filter to live with.
If you want both and can only buy one machine, buy the espresso-capable one. You can always grind coarser. You cannot grind finer than the machine goes.
Grinders worth buying
Not an exhaustive list. These are the ones I would actually recommend to someone asking.
Under $200, filter: Baratza Encore. The default recommendation for a decade for good reason. Conical, reliable, repairable, and Baratza will sell you every part in it. Not an espresso grinder, whatever the marketing says.
Under $200, hand: 1Zpresso Q2 or Timemore C3. A good hand grinder outperforms an electric grinder twice its price, because you are paying for burrs rather than a motor and a housing. The trade is a couple of minutes of effort per brew. If you make one or two cups a day, this is the best value in coffee.
Around $250 to $400, hand, does espresso: 1Zpresso J-Ultra or JX-Pro. Fine enough for espresso, precise enough to dial it, and excellent for filter. If you own an espresso machine and a modest budget, this is the answer.
Around $300 to $400, electric, filter: Fellow Ode Gen 2. What I use. 64 mm flat burrs, single dose, quiet, low retention, and it makes the pour-overs on this site taste the way they are supposed to. It does not do espresso.
Around $400 to $600, electric, does both: DF54 or DF64. Single-dose flat burr grinders that reach espresso fineness with stepless adjustment. The most grinder per dollar right now if you want one machine for everything.
Espresso only, if that is your life: Eureka Mignon Specialita. Stepless, quiet, built to run every day.
Turning my numbers into yours
Every brew recipe here lists a setting on the Ode 2, like "3.0" or "2.2". That number is meaningless on your grinder. Here is how to get from mine to yours.
The honest version first
There is no reliable conversion table. Grinder manufacturers do not agree on what a "setting" means, published micron figures for the same grinder disagree with each other by a factor of two, and burr wear moves the zero point over time. Anyone who hands you a precise cross-grinder conversion chart is guessing with confidence.
What does transfer is the result. Every recipe on this site lists a drawdown or steep time. That number is the real setting.
Calibrate by time, in three brews
1. Start in the right neighborhood. Use the table below to get roughly the right coarseness on your grinder. 2. Brew the recipe as written and time the drawdown, the steep or the shot. 3. Compare to the time in the recipe. Faster than the target means your grind is too coarse; go finer. Slower means too fine; go coarser. Move one step at a time and brew again.
Two or three brews and you will be within a step. Write that number on a card and tape it to the grinder; it is now your equivalent of my 3.0, and it will be right for your machine, your water and your beans, in a way no chart could be.

Rough coarseness by method, for getting into the neighborhood. Treat every number as a place to begin, not a destination.

The Ode column is the one I can vouch for, because those are the settings the recipes on this site were actually built on. The rest are starting points collected from manufacturer guidance and common practice, and your grinder will disagree with them slightly. That is fine. That is what step 2 is for.
