Toasty and roast forward with low acidity. Rounded, some chocolate. Sweeter than it is distinct: more of a winter morning than a summer day.

It is forgiving across a wide range of methods, holds a long drawdown without turning bitter, and it is the reason the flash brew comes out sweet rather than sharp.

- Dose and ratio
- House ratio is 55 g to 800 g in the Chemex, stronger than most published recipes, and it suits this roast.
How to drink it. Flat Track build it for milk and it shows: the body and the chocolate hold their shape, so a latte or a cortado tastes like the coffee rather than like milk. Good black too, where the toast and the low acidity come forward. Skip the sugar either way.
